Basbousa Recipe / Harissa Dessert

Ingredients:

  • 1 cup of flour

  • 1 cup of semolina

  • 1 cup of fine coconut

  • 1/2 - 2/3 cup of sugar

  • 3/4 cup of vegetable oil

  • 1 + 1/2 cups of milk

  • 1 Tbsp of baking powder

  • Almonds for decoration


To Make the sugar syrup:

  1. In a pot pour 1 cup of water and add 2 cups of sugar to it.

  2. Place the pot over high heat and bring it to a boil.

  3. Add 1 teaspoon of lemon juice and let it boil for 2 minutes only.

  4. Let it cool.


To make the cake:

  1. In a bowl mix all the ingredients together.

  2. Grease and flour the baking pan or brush it with Tahini sauce.

  3. Pour the cake batter into the pan and bake it for 20 minutes in a preheated 180°C oven. (The cake isn't fully done here)

  4. Cut the cake into evenly sized squares and place an almond in the center of each square.

  5. Return the cake to the oven and let it bake for extra 15 minutes ( turn the top element (the broil element) on for the last 5 minutes) until golden brown

  6. Pour the sugar syrup over the cake as soon as it's removed from the oven.

  7. Let it cool. Enjoy!


 

Note: You can have the cake without the syrup if you prefer it less sugary.
