Ingredients:
1 green bell pepper
1 yellow bell pepper
1 orange/res bell pepper
1 onion
Boneless chicken breasts (medium sized cubes)
Vegetable oil
Homemade Mexican spices mix:
1/2 Tbsp chili powder
1/2 Tbsp ground cumin
1/2 Tbsp garlic powder
1/2 Tbsp onion powder
1 teaspoon paprika
1/2 teaspoon oregano
1/2 Tbsp salt
1/4 Tbsp pepper
1/4 Tbsp of mixed chicken spices
Directions:
In a pan, heat about 2 Tbsp of vegetable oil, then add the bell peppers and onion and cook for 5 min. Then remove them
Brown the chicken in the pan.
Add the spices and mix well.
Cover the pan and let the chicken cook on low heat for 20-30 min with occasional stirring.
Uncover and add the bell peppers and onion. Increase the heat and let them cook together for about 10 mins.
