Fajita Chicken

Ingredients:

  • 1 green bell pepper

  • 1 yellow bell pepper

  • 1 orange/res bell pepper

  • 1 onion

  • Boneless chicken breasts (medium sized cubes)

  • Vegetable oil

  • Homemade Mexican spices mix:

1/2 Tbsp chili powder

1/2 Tbsp ground cumin

1/2 Tbsp garlic powder

1/2 Tbsp onion powder

1 teaspoon paprika

1/2 teaspoon oregano

1/2 Tbsp salt

1/4 Tbsp pepper

1/4 Tbsp of mixed chicken spices


Directions:

  1. In a pan, heat about 2 Tbsp of vegetable oil, then add the bell peppers and onion and cook for 5 min. Then remove them

  2. Brown the chicken in the pan.

  3. Add the spices and mix well.

  4. Cover the pan and let the chicken cook on low heat for 20-30 min with occasional stirring.

  5. Uncover and add the bell peppers and onion. Increase the heat and let them cook together for about 10 mins.

  6. Enjoy!
