Dates Cookies

Ingredients:


  1. 1-2 cups of Pitted dates (depending on the size of the dates you're using: small dates 1 cup, medium sized dates 2 cups)

  2. 1 egg.

  3. Vanilla.

  4. 1/2 cup butter (100g).

  5. 1+ 1/4 cups all purpose flour.

  6. 1/2 Tbsp cinnamon powder.

  7. 1 Tbsp of baking powder.

  8. A handful of crushed walnuts.


Directions:


  1. In a pot, on medium heat, melt the butter then add the dates. Turn heat off.

  2. Mix well and using the fork or smasher mash the dates. Let it cool in the fridge for 15 minutes.

  3. Add the egg and vanilla. Mix well. Then add the flour, cinnamon and baking powder.

  4. Add the crushed walnuts.

  5. Using an icecream scoop, scoop some from the cookie dough into a baking tray lined with baking paper.

  6. Using a fork press gently on the balls to spread them.

  7. Then place the tray in a preheated 180°C oven. Bake until it's crispy from the outside but still soft from the inside. (About 15-20 min)
