Ingredients:
Raisins
3 Shredded Carrots.
1 big onion.
1 chicken
3 diced Tomatoes.
1 Tbsp salt.
1/2 Tbsp black pepper.
1 Tbsp of mixed spices.
water.
vegetable oil.
2 cups of Basmati rice
Ingredients for marinating the chicken:
1/2 Tbsp salt
1/4 Tbsp black pepper
1/4 Tbsp mixed chicken spices
1/4 Tbsp garlic powder
1/2 teaspoon Cinnamon
1/2 teaspoon paprika
chili flakes to taste
4 Tbsp olive oil
Directions:
In a bowl mix all the spices needed for marinating the chicken then add the chicken and mix well. Let it marinate for 1 hour.
In a pot, brown the chicken on high heat then transfer it to a plate.
In the same pot fry the raisins for 5 mins then transfer them to a plate. Fry the carrots next and similarly transfer them to the plate with the raisins.
Cut the onion into feathers then fry them in the pot.
Add the chicken, the diced tomatoes, salt, black pepper and the spices and mix well.
Cover the pot and let it cook on lowest heat for about 30 mins.
Meanwhile, soak the rice in warm water.
Add raisins to the pot and some of the carrots. Then layer half of the rice over it. Next put the remaining carrots followed by the remaining rice.
Add boiling water until it's slightly above the level of the rice.
On high heat, let the water evaporates until it reaches the same level of the rice.
Then cover the pot and let the rice cook on lowest heat for 15 mins or until the water evaporates completely.
Flip the pot on a large plate.
