Coconut Cupcakes

Ingredients:

  • 4 eggs

  • 1 cup of sugar

  • Vanilla

  • 1/2 cup of vegetable oil

  • 2/3 cup of milk

  • 1+3/4 cups of flour

  • 1 cup of coconut

  • 1 Tbsp of baking powder


Directions:

  1. Whisk eggs, sugar and vanilla well until the mix doubles and becomes creamy.

  2. Add vegetable oil, milk, flour, coconut and 1 Tbsp of baking powder.

  3. Mix well.

  4. Pour the batter equally into the cupcake liners (about 2/3 of the liner).

  5. Sprinkle coconut on top of each cupcake.

  6. Bake in a preheated 180°C oven for 20-30 minutes.

  7. Optional: decorate them with chocolate and coconut sprinkles.

  8. Enjoy with tea or coffee 😋.
