Ingredients:
4 eggs
1 cup of sugar
Vanilla
1/2 cup of vegetable oil
2/3 cup of milk
1+3/4 cups of flour
1 cup of coconut
1 Tbsp of baking powder
Directions:
Whisk eggs, sugar and vanilla well until the mix doubles and becomes creamy.
Add vegetable oil, milk, flour, coconut and 1 Tbsp of baking powder.
Mix well.
Pour the batter equally into the cupcake liners (about 2/3 of the liner).
Sprinkle coconut on top of each cupcake.
Bake in a preheated 180°C oven for 20-30 minutes.
Optional: decorate them with chocolate and coconut sprinkles.
