Ingredients:
1 large onion cut into quarters.
2 cups of soaked-drained Basmati Rice.
1 whole chicken or equal amount of lamb.
400 grams of green peas.
1 Tbsp of Salt.
1/3 Tbsp of black pepper.
1 Tbsp of mixed chicken spices.
1/4 Tbsp of ground cardamom.
1/4 teaspoon of turmeric
3 bay leaves.
1 cinnamon stick
vegetable oil.
Directions:
Wash chicken with cold water and put it in a pot then fill it with water and place it on top of high heat.
As soon as it begins to boil, remove scum with skimmer, add salt, pepper, mixed spices, ground cardamom, bay leaves, turmeric and the onion. Put a lid on and reduce heat to low. Let it boil for 1-1.5 hours.
Sprinkle salt and black pepper on the green peas and fry them in a pot (not deep fry, use a little amount of vegetable oil) for 15 mins. You can use the air-fryer.
Add the chicken.
Layer the rice on top of the chicken and peas.
Pour sieved chicken/lamb broth until it's slightly above the rice's level.
let it boil on high heat until the broth is exactly at the same level of the rice. Put lid on and let it cook for 15-30 min on lowest heat.
Remove the lid then place a large plate on top of the pot and upturn it. Slowly remove the pot. The rice now is the bottom layer and the peas+ meat are the top layer.
