Ingredients:
170 g of youghurt
1 Tbsp of honey
1+1/2 Tbsp of yeast
2/3 Tbsp of salt
2 cups of warm milk
1 cup of warm water
1/4 cup of olive oil
A handful of each: sesame seeds, nigella seeds and fennel seeds.
1 cup of ground oats
6-7 cups of whole wheat flour
Directions:
In a bowl, mix the youghurt, honey, yeast, milk, water, olive oil, salt and the seeds together.
Add the oats and mix well.
Add the flour, one cup at a time and knead until a dough forms.
Brush the dough with olive oil and let it rise for 1 hour.
To make Pita mini bread:

Cut the dough into two balls.
Spread each ball into a circle with a thickness around 5 mm-10 mm.
Using a circular cookie cutter (or a mug) cut the dough into mini circles.
Preheat the pan on high hear for 5 minutes, then place the bread on it.
Allow the bread to rise (like a balloon) then flip it on the other side for 1-2 minutes then remove.
Or using the air-fryer:
Preheate the air-fryer at 200°C for 4 mins.
Place the bread in it and let it bake for 3-4 minutes then remove.
To make bread buns :

Cut the dough into medium sized balls.
Round them into a perfect shape.
Brush them with milk then sprinkle seeds for decoration.
Bake in a preheated 200°C oven until golden brown.
To make a Toast Loaf:

Cut the dough into 2- 3 balls depending on the toast mold you're using.
Line your mold with baking paper.
Spread the ball with your hand lightly into a rectangle having the same length of the mold used.
Roll the rectangle into a loaf and place it in the mold.
Let it rise for another 40-60 min
Bake in a preheated 200°C oven for 40 minutes.
Note: cover the bread with a damp towel after baking to protect it from drying.
Preferably, use a granite toast mold.
